Some good points here. I have often been disappointed in the quality of steak I have purchased. I now only ever buy steak has been aged for quite a long time otherwise it just seems to be tough and rather tasteless. I usually cook mine in brandy and cream sauce. Yum.

Dude, I am starving now after reading this. One of my favorite summer fares is steak with some balsalmic mushrooms smothered on it. YUM.
